Boba Mochi Waffles Recipe by Kat Lieu (modernasianbaking.com)


Hi fam. If you’re a brown sugar boba lover, here’s the perfect recipe for you. It’s super simple and versatile and frankly, foolproof. My friend Donna was just telling me about how she used to stand in long lines in Flushing NYC to wait to buy mochi waffles. Well now you can make mochi waffles that taste like boba at home. All you need is a waffle maker. And if you don’t have a waffle maker, make pancakes with the same batter.

To make these mochi waffles at home, simply blend all the ingredients in a blender and pour the batter onto a waffle maker. Follow the waffle maker’s manufacturer’s instructions.

Now If you don’t have a blender, you can hand mix all the ingredients, or use a stand mixer fitted with the paddle attachment.

You can also make these gluten-free waffles vegan but using these substitutions. Instead of eggs, you can use tofu, apple sauce, or bananas. For milk, you can use plant-based milk. And feel free to add some oil to the batter, like 1 tablespoon of butter or vegan butter.
