How to Make a Moist and Fluffy Chocolate Cake with Just 2 Ingredients: Cola and Boxed Cake Mix

If you've run out of milk and eggs, don't worry! You can still bake an amazingly moist and fluffy chocolate cake with just two ingredients: cola and boxed cake mix. I recently made a decadent chocolate cake as the foundation for my Black Forest birthday cake to celebrate my husband's special day.

With the summer heat wave and our AC broken, I opted to bake this cake in the rice cooker. However, you can also use an oven or air fryer if you don't have a rice cooker.

For the frosting, it's easy to whip up, and I used a vegetable peeler to create chocolate shavings from a cherry chocolate bar. Enjoy this simple and delicious cake recipe!

Hi friends, If you've run out of milk and eggs, you can still nake an amazingly moist and fluffy chocolate cake with just 2 ingredients: cola and boxed cake mix! I made a decadent chocolate cake to use as the foundation for my Black Forest birthday cake to celebrate my husband's birthday. Since there's a heat wave this summer and our AC busted, I made this cake in the rice cooker, but you can make this cake in the oven or air fryer if you don't have a rice cooker!The frosting is easy to whip up, and I used a vegetable peeler to make chocolate shavings with a cherry chocolate bar.

Ingredients

For the cake

• 1 boxed cake mix (moist chocolate flavor)
• 1 regular-sized can cherry cola (soda)

For the frosting

• One (8-ounce) bar cream cheese, softened
• 1/4 cup unsalted butter, softened
• 3/4 to 1 cup confectioners' sugar, sifted
• 1 teaspoon miso
• Scant drop purple food coloring or ube extract to make the frosting appear whiter

For the chocolate shavings

• 1/2 bar of semi-sweet chocolate (I used a chocolate cherry flavored dark chocolate bar)

For topping the cake

• Cherries or Maraschino cherries

Instructions

For the cake

1. Whisk all the contents from 1 box of chocolate cake mix with 1 regular-sized can of cherry cola. Regular cola works too, along with cherry-flavored seltzer water; however, your cake might not taste sweet enough if you're using seltzer.
2. Bake the cake according to the box instructions. Do not add other ingredients. The carbonation and sugars in the cola will help the cake rise and stay moist and fluffy.
3. Alternatively, use a rice cooker to make the cake. You may need a rice cooker with the "mix" function/mode available, and it may take up to 3 times to get the cake to set and bake up nicely. Also be sure to generously grease the rice cooker inner pot; otherwise, the cake may be stuck to the pot

For the frosting

1. While the cake is cooling out of the oven, make the frosting. Simply beat all the frosting ingredients together until fluffy, smooth, and spreadable. Transfer to a piping bag fitted with a large star tip. Refrigerate until ready to use.

For the chocolate shavings

1. Shave half a bar of chocolate into a small bowl using a vegetable peeler. Be careful not to cut your fingers or hands.

Assemble the cake

1. Once the cake is cooled, pipe the frosting over it. You can look at sample Black Forest cake photos online to see how you'd like to pipe the cake.
2. Decorate and garnish the cake with the chocolate shavings and top the frosting with the cherries. Refer to my reel https://www.instagram.com/p/C9V4LMCyU0_/ to see how I decorated my cake.
3. Enjoy with tea or coffee!
