The Best Matcha Chocolate Chip Cookies Recipe (Levain Style)


Hi friends,

Cookies are a hit or miss for me because most of the time, they either don’t have enough chocolate chips (no thanks, “boneless cookies”), or they’re just a little too sweet for my palate. My miso matcha chocolate chip cookies are not too sweet and actually have a pleasant hit of umami, thanks to three umami-rich ingredients: miso, matcha, and MSG. MMM indeed!

Of course, you can skip adding MSG and stick to just miso and a pinch of salt, if you’re still stuck on the notion that MSG is toxic for human consumption. False. It’s honestly no different from salt, derived from the fermented sugars of sugarcane or kelp. Its main component is glutamate, which is naturally found in mushrooms, cheese, scallops, meats, tomatoes, and even breast milk! Yes, the human body makes its own glutamate!

Back, back to my cookies: they are chonky, delicious, satisfying, and so flavorful. Definitely make them this holiday season to stuff a cookie box. Your friends and loved ones will be soooo impressed! While I love making these very big, they are fine when you make them as small cookies. Just keep them rustic, like a rounded drop cookie, rather than a very smooth ball before baking them.

So, whether you’re team MSG or just miso curious, these cookies are a must-try. They’re proof that cookies don’t need to be cloyingly sweet or skimpy on flavor to be absolutely delicious. Plus, they’ll give your holiday cookie game that unexpected twist everyone will be raving about!
